Sunshine Salad

ingredients

• 1 large box of apricot or peach Jell-O
• 1 large can of crushed pineapple (drain and reserve juice)
• 3/4 cup sugar
• 2 TBS flour
• 1 egg
• 8 oz cream cheese (softened)
• 8 oz Cool Whip
• 1 & 1/4 cups shredded sharp cheddar (I prefer the fine shred)

the making of it

1. Dissolve Jell-O in 2 cups of boiling water.
2. Add 1 cup of cold water, stir together, and pour into a long container or glass cake pan.
3. Add drained pineapple before it completely sets; give it a little time to cool first.
4. In a saucepan, stir together sugar, flour, egg, and 1 cup of pineapple juice. Heat until thick. Pull from heat and let cool. Then spread over the set Jell-O mixture.
5. Chill until time to serve.
6. Right before serving top with shredded cheese and enjoy!
