Strawberry Shortcake Popsicles

• 1 1/2 cups fresh strawberries, hulled and diced (strawberry layer)
• 2 tablespoons granulated sugar
• 1 tablespoon lemon juice
• 1 teaspoon vanilla extract
• 1 1/2 cups vanilla Greek yogurt (cream layer)
• 1 cup heavy cream
• 1/4 cup powdered sugar
• 1 teaspoon vanilla extract
• 1 cup shortbread cookies (such as Golden Oreos or vanilla wafers), crushed (shortcake crumble)
• 2 tablespoons melted butter

1. Make the strawberry layer. In a small saucepan over medium heat, combine the strawberries, granulated sugar, and lemon juice. Stir and cook for 5-7 minutes, until the strawberries are soft and juicy. Remove from heat and stir in the vanilla extract. Let cool completely.
2. Make the cream layer. In a large mixing bowl, whisk together the Greek yogurt, heavy cream, powdered sugar, and vanilla extract until smooth and slightly thickened.
3. Prepare the shortcake crumble. In a small bowl, combine the crushed cookies with melted butter. Stir until the crumbs are evenly coated.
4. Assemble the popsicles. In popsicle molds, add a spoonful of the cream mixture, a spoonful of the strawberry mixture, and a sprinkle of the shortcake crumbs. Repeat layers, gently swirling with a knife or skewer. Top with a little extra crumble.
5. Insert popsicle sticks and freeze for at least 6 hours, or until completely solid.
6. To remove, run the molds under warm water for a few seconds.
