Gingerbread Blondies

ingredients

• 1 cup (2 sticks) butter (227g)
• 1 1/2 cups light brown sugar, packed (300g)
• 2 large eggs, room temp
• 2 TBS molasses
• 1 tsp vanilla extract
• 2 1/2 cups all-purpose flour (312.5 g)
• 1 tsp baking powder
• 1/2 tsp salt
• 1 1/2 tsp ground ginger
• 2 tsp ground cinnamon

the making of it

1. Preheat oven to 350 F (175 C) and line a 9X9 pan with parchment paper.
2. In a large bowl, combine butter and brown sugar. Mix well.
3. Mix in eggs, molasses, and vanilla.
4. In a separate bowl, whisk together flour, ginger, cinnamon, baking powder & salt.
5. Gradually mix the flour into the butter/egg/sugar mixture until combined.
6. Spread evenly in the pan and bake for 15-40 minutes depending on your oven.
7. Make sure a toothpick comes out clean in the middle.
8. Cool, slice, and enjoy.
