Fruit Cobbler

ingredients

• 1 large can of fruit in heavy syrup OR 2 cups of fresh fruit
• 1 cup flour
• 1 cup sugar (if using fresh fruit, 1 1/2)
• 2 eggs
• 1/2 cup oil
• 1 cup milk
• 1 cup melted butter
• 2 TBS cornstarch (if using fresh fruit)

the making of it

1. Preheat oven to 350.
2. If using fresh fruit, rinse, drain, and chop the fruit. Add to a saucepan with 1/2 cup sugar, 1/4 cup water, and 2TBS cornstarch. Cook this down over medium heat until it is heavy with syrup and juices. If it gets too thick or starts to burn, add water a little at a time to even out the consistency. Pour mixture into your baking pan.
3. If using canned fruit skip all above and just add to baking pan.
4. In a large bowl, mix flour and 1 cup sugar, egg, oil, and milk until well combined.
5. Pour batter over fruit, swirling through as you pour.
6. Follow with melted butter, swirling through as well. DO NOT MIX!
7. Bake until done (Usually 30 to 45 minutes, depending on depth of pan).
