Stuffed Bell Peppers

ingredients

• 5 bell peppers (your choice of color)
• 1 lb ground beef
• 1 onion
• Rice
• Tomato or spaghetti sauce
• Salt & pepper
• Garlic & onion powder
• Shredded cheese
• V8
• Flour
• Mushrooms

the making of it

1. Preheat oven to 350°F. Parboil peppers until thin. Almost tender. Then set aside.
2. Brown ground beef and drain.
3. Cook rice according to directions (I use chicken bullion for my water).
4. Add cooked rice to ground beef. Add salt, pepper, garlic and onion powders.
5. Chop an onion and add it now if you want. You can also add mushrooms if you like those.
6. Stuff peppers and place in a deep casserole dish allowing them to stand up.
7. Cover peppers with sauce inside and out.
8. Bake at 350°F for about 45 minutes to an hour.
9. When cooked, remove drippings from pan. Put into a skillet. Make a roux with flour over medium-high heat. Let it thicken and add more sauce or V8 or chicken stock or... all three to make a gravy.
10. Plate the pepper. Cover with gravy mixture and top with shredded cheese.
