Pumpkin Bread

Moist, sweet, tender and perfectly spiced — a quick pumpkin loaf made tender with a secret instant pudding mix.

ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 (3.5 oz) instant coconut cream pudding
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 cup + 1 TBS veg oil
  • 3 eggs
  • 1 cup pumpkin

the making of it

  1. Preheat oven to 350°.
  2. Mix all dry ingredients, including the pudding mix, until combined.
  3. Mix in the wet ingredients until everything is well combined.
  4. Line a loaf pan and pour the mixture in.
  5. Bake until done (Varies per oven; usually an hour or so).
