Golden, buttery, and pulled from the oven still steaming — recipe from Amber Star, and worth every minute of rising.
ingredients
1 1/4 cups warm milk
4 Tablespoons melted butter
1/3 cup sugar
1 Tablespoon active dry yeast
1 1/4 teaspoon salt
4 cups all-purpose flour
1 Tablespoon melted butter
1/2 teaspoon salt (for topping)
the making of it
IMPORTANT NOTE! Your milk must be exactly 110° for this to work!
In the mixer, whisk warmed milk and 1 Tablespoon sugar. Sprinkle in 1 Tablespoon yeast. Stir a tiny bit and then let sit for 1 minute.
After 1 minute, whisk together and let sit for 5 minutes.
Now add in 4 Tablespoons melted butter, remaining sugar, and 1 1/4 teaspoon salt.
Add flour in 1/2 cup at a time until the dough is too thick to whisk.
Switch to a dough hook and mix on high speed, adding in about 4 cups total flour. Add in the last little bit only if needed. Dough should feel sticky/tacky but not stick to clean and dry fingertips.
Knead the dough for about 2 minutes then place in an oiled bowl, cover with towel and let rise about 2 hours in a warm place (doubled in size).
Once dough has risen, turn dough out on floured surface, cut into 15-16 even pieces and roll and pinch into a ball shape. Place in oiled pan and cover with plastic wrap. Let rise an additional 30-60 minutes until puffed. DO NOT OVER PROOF.
Bake at 375° for 23-25 minutes or until tops are golden brown.
Pull from oven and brush with melted butter, then sprinkle with salt.
