Pawpaw Jam

ingredients

• 8 cups pawpaw pulp
• 4 TBS lemon juice
• 2 (1.75 oz) packages pectin
• 4 cups granulated sugar (white)
• 2 cups brown sugar (light or dark)

the making of it

1. In a heavy bottom pot, over medium-high heat, add 8 cups of pawpaw pulp and 4 TBS of lemon juice.
2. Stir and bring to a rolling boil.
3. Add in the two packages of pectin and let it come back up to a rolling boil for 1 minute. Remember to keep stirring.
4. Add in 4 cups of white sugar and 2 cups of brown sugar.
5. Stir until the sugar has dissolved and the mixture comes to a rolling boil. Keep stirring.
6. Once it reaches a rolling boil, stir constantly for 2 minutes.
7. After 2 minutes, remove from heat.
8. Ladle the hot jam into prepared canning jars, leaving 1/4 inch headspace.
9. Process in a boiling water bath for 10 minutes, or whatever time your altitude calls for.
10. Makes around a dozen half pint jars.
