Apple Butter

ingredients

• Rome Beauty apples
• 1 1/2 cups sugar
• 1 tablespoon ground cinnamon
• 1/4 teaspoon ground cloves

the making of it

1. Peel, core and slice apples thinly. Break into small pieces.
2. Place enough apples in a large pot to fill all the way to the top and add 1/2 cup water. Cook on medium heat, and as the apples cook down add more apples to make a full pot. Stir continuously, being careful not to scorch. If they get too thick you can add more water if needed.
3. After they are cooked completely (they will fall apart and cook up like apple sauce), turn the heat down low and stir in sugar, cinnamon and cloves, mixing well.
4. Let cook for 5 minutes, or until thick enough for apple butter. The apple butter should be thick.
5. Have jars hot in oven on 150°.
6. Have rings and taps hot in boiling water.
7. Fill jars leaving 1/2 inch head space on top and seal with ring and tap.
8. Make sure jars seal — if they don't, reheat and try again.
