Crunchy, creamy, and a little bit spicy — coleslaw gone cowboy, with Fritos stirred in right at the table.

ingredients

  • 1 bag cole slaw mix
  • 1 jalapeno, diced
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 bunch of green onions, chopped
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 1/4 cup lime juice (YES 1/4)
  • 1 pack taco seasoning
  • One bag of corn chips

the making of it

  1. In a large bowl mix together mayo, sour cream, lime juice, and taco seasoning.
  2. Chop all veggies and add to mixture.
  3. Add bag of cole slaw mix and black beans to bowl.
  4. Mix everything together well.
  5. Plate and serve with corn chips to mix in.

notes

If you add the corn chips to the whole bowl they will get soggy and leftovers will have soggy chips. Only add them as you serve the dish. ALSO in our house we use chicken or steak bites to add protein.
